CARROT BREAD

Ingredients

2 cups grated carrots
2 cups raisins
1 cup walnuts
2 cups brown sugar
4 teaspoons baking powder
1/2 cup cooking oil
1 cup boiling water
4 beaten eggs
1 teaspoon salt
1 teaspoon cinnamon
3 cups flour

Combine carrots, raisins, walnuts, eggs, sugar, cinnamon, salt,oil and boiling water. Stir in a seperate bowl flour, baking powder with mixer mix into the wet ingredients a little bit at a time just until blended. Pour into a buttered loaf pan and bake at 350 degrees for 40 to 50 minutes (time may vary according to oven). Remove from pan and let cool on wire rack.

Makes 3 loafs.
