Orange Cake

Serves 6 to 8

Ingredients

1 1/4 cup all-purpose (plain) flour
1/2 teaspoon baking powder
3 eggs, separated
1/2 cup plus 2 tablespoons unsalted butter
2/3 cup granulated sugar
grated zest of 1 orange
1/2 cup fresh orange juice
1/4 cup confectioners' (icing) sugar
orange sections (optional)

Directions

Preheat an oven to 350 degrees F. Butter and flour an 8-inch round cake pan.
In a small bowl, sift together the flour and baking powder. In a medium bowl, using an electric mixer, beat the egg whites until soft peaks form.
In a large bowl, using the electric mixer set on high speed, beat together the butter and granulated sugar until light and fluffy. Beat in egg yolks, one at a time. Reduce the speed to low, slowly beat in the flour mixture, the orange zest, and 1/4 cup of the orange juice. Fold the beaten egg whites into the yolk mixture just until combined. Spoon the batter into thr prepared pan.
Bake until a skewer inserted into the center comes out clean, 30-40 minutes. Remove from the oven and let cool in the pan on a rack for 10 minutes. Then turn out onto the rack and let cool to lukewarm. Transfer the cake to a platter.
In a small bowl, stir together the remaining 1/4 cup orange juice and confectioners' sugar until the sugar dissolves and pour evenly over the cake. Garnish with orange slices, if desired.
