Red Baked Chicken with Vegetables

 

Ingredients

vegetable oil (not olive oil)
paprika
cayenne pepper (optional)
1 or 2 14-1/2 ounce cans diced tomatoes
1 large purple onion, chopped
1 or 2 medium red bell peppers, chopped
8-10 chicken thighs
garlic powder

Directions

Preheat the oven to 350 degrees. Pour a thin layer of oil on a roasting pan, enough to cover the bottom. Sprinkle a liberal amount of paprika on the oil and stir. Sprinkle cayenne pepper, if desired, on the paprika oil to taste and stir again. Mix the vegetables in a bowl thoroughly, then spread them evenly over the oil. Season the chicken with paprika and garlic powder. Bake for 45 minutes to 1 hour.
