Serves 6
Ingredients
2 pounds new or red waxy poatoes, peeled [I left the peel on]
salt
2 bay leaves
a few slices onion
2 cloves garlic, peeled
2 tablespoons chopped walnuts
1/2 teaspoon cumin seed or ground cumin
2 tablespoons minced parsley
2 tablespoons minced pimiento
1/4 cup extra virgin olive oil
Directions
Place the potatoes in a saucepan with salted water to cover. Add
the bay leaves and onion slices and boil until tender.
Meanwhile, in a mortar or mini processor, mash to a paste the garlic, walnuts,
1/8 teaspoon salt, the cumin and the parsley. Add the pimento and continue mashing.
Stir in the olive oil [I advise you do this slowly].
Drain the potatoes, reserving a few tablespoons of the water in which they have
cooked. Stir in enough of it into the mortar mixture to make a sauce of a mayonnaise
consistency. Spoon over the potatoes or serve on the side.
