Leek and Cheese Sauce. | ||

Ingredients.
1 lg. leek, trimmed and chopped
2 cloves garlic, peeled and chopped
salt and pepper
1 tbs. chopped parsley
1 tbs. basil
½ pt med. white wine
2 fl.oz. Olive oil
5 oz. Mature cheese
2 egg yolks
Method.
Heat olive oil in pan.
Add leeks and cook over a low heat until soft.
Add garlic and cook for two minutes.
Remove from heat and place leek in blender together with herbs, wine, cheese and egg yolks.
Process to form a thick, smooth sauce.
Season to taste.
