MINCEMEAT APPLE CAKE
For a festive touch....Glaze the top and decorate with red and green
candies cherries
Serves: 10
Ingredients:
2 c. flour
1/2 c. packed brown sugar
1 T. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. baking soda
1/4 tsp. ground cloves
2 eggs, beaten
1 c. prepared mincemeat
1/3 c. applesauce
1/3 c. apple juice
2 T. butter, melted
Method:
In a bowl, combine the first 6 ingredients. Combine the next 5
ingredients; stir into dry ingredients. Pour into a greased 8-cup
fluted tube pan. Bake at 350-F for 35-40 minutes or until cake
tests done. Cool for 10 minutes; remove from the pan to a wire
rack to cool completely.
LEMON SAUCE:
1 c. sugar
3 T. cornstarch
2 c. water
1/4 c. butter
1 T. grated lemon peel
2 tsp. lemon juice
Combine sugar and cornstarch in a sauce pan. Stir until smooth.
Bring to a boil; cook for 2 minutes. Remove from the heat; stir in
butter until melted. Add lemon peel and juice.
Serve warm over the cake.
