APPLE CHEDDAR CHICKEN

Tender chicken breasts are stuffed with cheddar cheese, coated with ground walnuts, then sautéed until golden brown. The savory apple salsa adds a nice crunch.
Serves: 4
Ingredients:
4 TYSON Fresh Boneless Skinless Chicken Breast Halves
1/4 c. shredded sharp cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper
2 to 4 T. ground walnuts
2 T. olive or vegetable oil
1 c. cinnamon applesauce
1/2 c. chopped sweet red pepper
2 T. diced green onion
1 large tart green apple, cored and diced
Red or green apple slices, optional
Method:
Cut a slit in the side of each breast to form a pocket. Stuff each pocket with 1 T. cheese; press to close (secure with toothpick if necessary). Combine the next 3 ingredients; coat each breast with mixture.
Heat oil in a heavy skillet. Cook chicken for 4-5 minutes on each side or until internal juices run clear (temperature should read 170-F). Remove to platter; cover and keep warm.
In a small saucepan over medium heat, combine applesauce,red pepper and green onion; heat through, Stir in diced apple.
Spoon apple mixture over chicken. Garnish with apple slices if desired.
