APPLESAUCE SPICE CUPCAKES


Yield: 1 dozen

Ingredients:

1/3 c. butter or margarine, softened
3/4 c. sugar
2 eggs
1 tsp. vanilla extract

1-1/3 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves

3/4 c. applesauce

Method:
Cream Cheese Frosting

In a mixing bowl, cream butter and sugar.
Add eggs and vanilla; mix well.
Combine next 6 ingredients; add to creamed mixture
alternately with applesauce.

Fill greased or paper-lined muffin cups, that have been sprayed with
non-stick cooking spray, 2/3s full. Bake at 350-F for 25 minutes
or until cupcakes test done. Cool for 10 minutes before
removing to a wire rack. Frost cooled cupcakes.
