ALMOND VANILLA COOKIES
Mandelkakor med vanilj


Makes 20

INGREDIENTS:

300 g almonds
4 dl all-purpose white flour
4 dl sugar
pinch salt
2 eggs
1/2 tsp baking powder
1 vanilla stick
2 oranges

METHOD

First, melt approx 1 dl sugar for caramel in a frying pan.
Add almonds when the caramel is ready - be careful not to burn it! -
and mix with the caramel.
Remove from heat and let almonds cool. Chop them.
(You can make a little extra to have with coffee
or just as candy - they're delicious.)
Split the vanilla stick lengthwise, scrape out the seeds and mix them
with remaining sugar until finely parted.
Add eggs, juice and grated peel from the oranges, salt, baking powder,
and flour.
Mix to a batter and add the browned almonds. Drop out the batter on a
baking plate and bake at 200C/400F (Be careful - they might float
out so they'll need their space) around 10 minutes or so,
depending on how thick they are. Enjoy!


Conversion Chart
1 1/2 liter = 6 cups
1 liter (l) = 4 1/4 cups = good quart
500 ml = 1/2 liter = good 2 cups
1 dl = 100 ml = scant 1/2 cup
50 ml = 1/2 dl = scant 1/4 cup
1 kg = 2 1/4 lb
500 g = 1/2 kg = 1 lb 2 oz
250 g = 1/4 kg = 9 oz
100 g = 3 1/2 oz
50 g = scant 1/2 cup = 1 3/4 oz
1 inch = 2,54 cm
100 - 150C = 212 - 300F
175 - 225C = 350 - 425F
250C = 475F
275C = 525F
