CREAMY BANANA PECAN PIE
Serves:6-8
Ingredients:
1 c. flour
1/2 c. butter or margarine, softened
1 c. finely chopped pecans
1 pkg. (8 oz.) cream cheese, softened
1 c. confectioners' sugar
1 carton (8 oz.) frozen whipped topping, thawed. 'divided'
3 large firm bananas, sliced
1 pkg. (3.4 oz.) instant vanilla pudding mix
1-1/3 c. cold milk
Additional chopped pecans, optional
Method:
Combine the first ingredients.
Press onto the bottom and up the sides of a greased 9-in. pie plate.
Bake at 350-F for 25 minutes.
Cool completely.
In a mixing bowl, beat cream cheese and sugar.
Fold in 1 cup of whipped topping.
Spread over crust. Arrange bananas on top.
In a bowl, whisk pudding mix and milk. Immediately pour over bananas.
Top with remaining whipped topping. Garnish with pecans if desired.
Refrigerate until serving.
