BEEF STEAK WITH STIR-FRY VEGETABLES

Ingredients:
1 LB. beef top round steak, cut 1 inch thick
1 cup onion slices
1 cup green pepper strips
1 cup red pepper strips
2 cloves garlic, minced, divided
1/2 tablespoon dried basil leaves
2 teaspoons vegetable oil
1/8 teaspoon pepper
1/2 teaspoon salt

Method:
Stir fry onion, green pepper, red pepper, 1 clove garlic
and basil in 2 tsp. oil in large non-stick heavy frying
pan or wok over medium-high heat 7 to 8 minutes.
remove and keep warm. Rub remaining garlic and pepper
over both sides of steak. cook steak in same pan over
medium-high heat to doneness desired. 15 to 20
minutes, turning once. Sprinkle salt over both sides of
steak.
Carve steak diagonally across the grain into thin slices
Serve vegetables with steak.

Yield: 4 servings
Prep time: 15 minutes
Cooking time: 22 to 28 minutes
