~~Broccoli Salad~~

Fresh broccoli
Light salad oil
fresh lemons
fresh garlic
salt.

If ever there was a 'to your own taste' recipe...this is it! You can't go wrong!

Place fresh broccoli in cold water for about 30 minutes.
Drain and cut away outer leaves, and leaving about 2 inches of stalk.
Cut lengthwise into large pieces.
(From one head of broccoli..I get no more than three pieces...you want a lot of stalk on each piece)

Place broccoli in steamer ( I use a metal colander in a large
kettle..with a couple inches of water) 'tips up' and lightly salt tips.
Cook only until stalks are barely done.
(Have to test..maybe ten minutes)
Drain well and cool.

Arrange in a single layer on platter and refrigerate until chilled.

~~To your own taste~~ dribble oil over broccoli...lightly salt..
cover with finely minced garlic and the juice of one lemon.
Cut another lemon into wedges..and arrange around broccoli for table use.
If you are a garlic lover (as I am) you will want to really lay it on there.
(Do not turn broccoli ..as to 'toss'..once it is on the platter)

This can be fully prepared hours before you need it..as it only gets better 'marrying'!
