CHICKEN AND BEAN CASSEROLE

Serves 4

INGREDIENTS:

1 chicken, approx 1 kg
1 onion
1 green or red pepper
2 tbs oil
1 can whole tomatoes, 400 g
1 cube chicken stock
1/2 tsp oregano
1/4 tsp chili powder
1/4 tsp cumin
dash cayenne
2 1/2 dl grated cheese
1 can white or red beans, approx 400 g
1 1/2 - 2 tbs lime juice
salt

METHOD

Cut and de-bone the chicken. Remove skin and cut meat in smaller
pieces. Peel and chop the onion. Trim the pepper and shred it.
Heat the oil in a pot and sautée onion and pepper for a few minutes.
Add the chicken and sautée for another 5 minutes.
Add tomatoes and stock cube. Sprinkle with oregano, chili powder,
cumin, and cayenne.
Cover and let boil for about 20 minutes.
Add the cheese and let it melt.
Gently add the beans and boil for another minute or two.
Flavor with lime juice and salt (if necessary) and serve with boiled
rice, shredded iceberg lettuce, sliced avocado, and maybe some
extra grated cheese.

1 1/2 liter = 6 cups
1 liter (l) = 4 1/4 cups = good quart
500 ml = 1/2 liter = good 2 cups
1 dl = 100 ml = scant 1/2 cup
50 ml = 1/2 dl = scant 1/4 cup
1 kg = 2 1/4 lb
500 g = 1/2 kg = 1 lb 2 oz
250 g = 1/4 kg = 9 oz
100 g = 3 1/2 oz
50 g = scant 1/2 cup = 1 3/4 oz
1 inch = 2,54 cm
100 - 150C = 212 - 300F
175 - 225C = 350 - 425F
250C = 475F
275C = 525F
