Chicken Hekka

A Japanese Dish
From Fred's Kitchen

Ingredients:
2 lbs.. chicken thighs
1 can (5 1/2 oz bamboo shoots, sliced)
2 med. onions, sliced
1 bunch green onions, cut in 2" lengths
2 tbs. sake or white wine
1 tbs. oil
1/3 cup soy sauce
1/2 cup sugar
1 can (oz) mushrooms (hold liquid)
1 tsp. salt

Heat oil. add chicken and fry for a few minutes.
Add soy sauce, salt, sugar and mushroom liquid.
When it starts boiling, add mushrooms, bamboo shoots and onions.
add green onions, and sake (or white wine) before serving.

For faster cooking: skin and debone thighs
variations: tofu, long rice, gobo and /or other fresh vegetables
