FIESTA CHICKEN SOUP


Serves: 5

Ingredients:

1 lb. boneless skinless chicken breasts, cut into cubes
1 large green...or..sweet red pepper, coarsely chopped
2 tsp. chili powder
1 tsp. garlic powder

2 cans (14-1/2 oz., each) chicken broth
1 pkg. (10 oz.) frozen whole kernel corn
1 c, cooked rice

1 tsp. chopped fresh cilantro..or.. parsley
5 lime wedges

Method:
Coat a 3-qt. saucepan with nonstick cooking spray, heat for 1 minute.
Add first 4 ingredients; cook 5 minutes, stirring often.
Add the next 3 ingredients.
Bring to a boil.
Cook over low heat for 10 minutes or until chicken is done.
Stir in cilantro.
Serve with lime wedges.
