FILLED POTATOES
Fyllda potatisar


Serves 4

INGREDIENTS:

4 baking potatoes
or 4 large "ordinary" potatoes
50 g soft butter or margarine
2 - 3 tsp mustard
1/2 tsp salt
dash powdered paprika
1 dl sour cream
4 slices cheese, e.g. Cheddar or some other strong taste

Decoration:
chopped chives or parsley

METHOD

Thoroughly wash the potatoes and prick them with a fork. Put in an
oven-proof dish. Bake in the middle of the oven at 200C/400F
for about 1 hour or until tender. Cut of a "lid" and gently scoop
out the contents with a spoon. Leave a narrow edge all around the potato.

Put the mashed potato you've scooped out in a bowl, mix in fat,
mustard, salt, paprika, and sour cream, and stir until fluffy.
Fill the potatoes with this mixture and put on a slice of cheese.
Bake in the upper part of the oven for about 10 minutes or until
the cheese has melted.

Sprinkle with chopped herbs and serve.

100 - 150C = 212 - 300F
175 - 225C = 350 - 425F
250C = 475F
275C = 525F
