FRESH 'N' FRUITY SALAD...Nut. Ana. & Dia. Exch.

Serves 6-8


1 can (20 oz.) unsweetened pineapple chunks, drained
1 can (15 oz.) unsweetened dark sweet cherries, drained
1-1/2 c. cubed cantaloupe
1-1/2 c. cubed seeded watermelon
1-1/2 c. cubed honeydew

DRESSING:
3 T. vegetable oil
3 T. orange juice
3 T. lemon juice
2 T. sugar
1/4 tsp. paprika

Combine fruit in a large bowl. In a small bowl dressing ingredients;
pour over fruit and toss to coat. Serve immediately with a
slotted spoon.

Nutritional Analysis: One 1/2 cup serving equals 140 calories,
8 mg sodium, 0 cholesterol, 24 gm carbohydrate, 1 gm protein, 6 gm fat.
Diabetic Exchanges: 1-1/2 fruit, 1 fat.
