Makes 1 cake, approx 12 pieces

This is a very generous coffee cake, often served at the Rosendal
Garden Café in Stockholm. I've been there ... it's a BEAUTIFUL garden,
large and luscious, with lots of garden houses (plant houses?),
and also houses with exhibitions of different artists, and then
this wonderful café with their cakes to die for. I've got my
eyes on a cookbook of theirs, which I hope to be able to buy soon.
Books are so EXPENSIVE in Sweden it's a real shame!:o(
I should also say the cake is named after the apple "James Grieve".

INGREDIENTS:

Batter no. 1:
75 g (good 2 1/2 oz) butter or margarine
1 dl (1/2 cup) sugar
1 tbs vanilline sugar
2 eggs
2 dl (1 cup) all-purpose white flour
1 tsp baking powder
4 James Grieve apples or other tart apples
(weight approx 800 g / 1 lb 12 oz)

Batter no. 2:
2 eggs
3/4 dl (2/3 cup) sugar
2 tbs vanilline sugar
1 1/2 dl (3/4 cup) creme fraiche or sour cream


METHOD:
Butter and breadcrumb a spring form, diameter 24 cm / good 9".
Heat the oven to 175C/350F.

Make batter no. 1: Stir fat, sugar, and vanilline sugar fluffy.
Add the eggs and the flour, mixed with baking powder. Pour the batter
in the dish. Peel, split, core, and cut the apples in wedges. Put them
in a circle on top of the batter. Bake in the oven for about 20 minutes.

Meanwhile, make batter no. 2: Beat eggs, sugar, and vanilline sugar
fluffy and then stir in the creme fraiche or sour cream. Take out
the cake and gently pour the batter over it. Then continue baking for
another 40 minutes or so, until the cake is nicely colored on
the surface. It should be a little "loose" in the middle
when it's ready. Enjoy!

175 - 225C = 350 - 425F
250C = 475F
275C = 525F
