~~Make Ahead Mashed Potatoes~~

Ingredients:
9 large baking potatoes (peeled and cut into chunks)
1/2 cup butter, softened
12 ounces cream cheese, at room temperature (cut into small pieces)
1/2 cup sour cream
pinch of nutmeg
1/4 teasp. white pepper
1/2 teasp. salt

Using a large pot, cook potatoes until tender.
Drain and place in mixing bowl; beat with electric mixer
until light and fluffy.
Beat in the butter and cream cheese, a little at a time.
Beat in sour cream and seasonings.

Scrape into heavily buttered casserole..
cover with plastic wrap and refrigerate.
To cook, bring to room temperature and reheat at 300 degrees,
uncovered 20/30 minutes.
Serves 8
Note: This may be prepared two days ahead.
I found that it serves more than 8..
and may take longer to heat to 'piping', so allow some extra time
until you get the 'feel'. Helps to have someone add things
as you mix. This is a lot of taters folks..
so use big bowl (or pot you used for boiling) to beat them in.
I have split into two smaller casseroles dishes as well.
