GLAZED ORANGE DATE SQUARES
Yield: 3 dozen
Ingredients:
1-1/4 c. chopped dates
3/4 c. packed brown sugar
1/2 c. water
1/2 c. butter
1 c. (6 oz.) semisweet chocolate chips
2 eggs
1/2 c. milk
1/2 c. orange juice
1-1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1 c. chopped walnuts
Method:
In a saucepan, combine the first 4 ingredients. Simmer for 5 minutes;
stirring occasionally, or until dates are softened.
Remove from the heat; stir in chocolate chips.
Beat eggs, milk and orange juice.
Combine flour, baking soda and salt; add the date mixture alternately
with orange juice mixture, mixing well after each addition.
Stir in walnuts. Pour into a greased 15-in. x 10-in. x 1-in. baking pan.
Bake at 350-F for 25-30 minutes or until a toothpick comes out clean. Cool.
ORANGE GLAZE:
3 c. confectioners' sugar
1/4 c. butter, softened
1 tsp. grated orange peel
1/3 c. milk
Combine the first 3 ingredients; stir in milk until glaze reaches
desired consistency. Spread over the bars.
