Fresh Pineapple Pie

Ingredients:
Double pie crust dough:
1/4 cup sifted flour
2/3 to 1 cup sugar (depending on sweetness of pineapple)
1/8 tsp.. salt
3 large eggs
1 TBS. lemon juice
2 cups fresh hand shredded pineapple
(no fresh pineapple? use canned crushed pineapple)
1/2 cup natural pineapple juice
2 TBS. butter

Line pie pan with half of crust.
Mix together flour, salt and sugar.
Beat eggs and add to flour-sugar mixture.
Add lemon juice, pineapple, and pineapple juice. Mix well.
Pour into unbaked pie crust. Dot with butter. Cover with rest of pie crust dough., sealing well.
Slit steam vents on top.
Bake at 450 for 10n minutes and then 35 to 45 minutes for 350.
cut when cooled.
