SPICY ALMOND SWIRL COOKIES
Kryddsnurror med mandel

A different cookie with an exciting taste. The spices harmonize
well with the almonds. They're easy to make, especially if you
use ready-made almond paste.

Makes approx 60 cookies

INGREDIENTS:

5 dl all-purpose wheat flour
3/4 dl sugar
2 tbs treacle (molasses) - a light-colored kind, if you have
2 tsp ground cinnamon
2 tsp ground cardamom
1 tsp ground ginger
300 g butter or margarine
2 egg yolks

Filling: 300 g almond paste

METHOD

Mix flour, sugar, treacle, and spices in a food processor or put them
in a pile on the work surface. Add fat, cut in small pieces, and
egg yolks.

Quickly work to a smooth dough. Wrap it up in plastic foil and put in
the fridge for 1 hour.

Roll out the almond paste between double layers of plastic foil to 2
flat cakes, approx 25 x 35 cm / 10 x 14". Part the spicy dough in
two equally large parts and roll them out on a lightly floured
surface to the same size as the almond paste cakes.

Put one of the almond paste cakes on top of one of the dough cakes and
roll them up from the long side to a firm, sausage-shaped roll.
It's good if you can put it in the fridge for about 30
minutes. Do the same with the remaining dough and almond paste cakes.

Cut the dough rolls in good 1/2 cm / 1/4" slices. Put them on greased
baking plates or on baking paper. Bake in the middle of the oven at
175C/350F for 12 minutes. Let cool on a rack.

Keep the cookies in a covered jar. They keep for about 3 months in the freezer.

You can substitute the spices for cocoa powder, 2 - 3 tsp.

1 inch = 2,54 cm
100 - 150C = 212 - 300F
175 - 225C = 350 - 425F
250C = 475F
275C = 525F
