SAUSAGE BEAN SOUP

Ready in 30 minutes or less

Serves: 4-6

Ingredients:

3/4 lb. bulk Italian sausage
1/2 c. chopped onion
1 garlic clove garlic

1 can (15-1/2 oz.) butter beans, rinsed and drained
1 can (15 oz.) black beans, rinsed and drained
1 can (14-1/2 oz.) beef broth
1 can (14-1/2 oz.) diced tomatoes, undrained
1 T. minced fresh basil..OR..1 tsp. dried basil

2 T. shredded Parmesan cheese


Method:
In a large saucepan, cook the first 3 ingredients until the sausage is browned;
Drain.
Add the next 5 ingredients.
Cover and simmer for 10 minutes.
Sprinkle each serving with Parmesan cheese.
