Soft Pretzels
Ingredients:
1 packet active dry yeast
1-1/2 cups of warm water(105-115 degrees F)
1 teaspoon of salt
1 teaspoon sugar
3 1/2 to 4 cups of flour
1 egg, beaten to blend
COARSE salt
Dissolve yeast in the warm water.
Stir in salt and sugar and 2
cups of flour.
Beat until smooth.
Stir in enough flour to make
dough easy to handle.
Work on lightly floured surface.
Knead
dough for about 5 minutes or until the dough is smooth and
elastic.
Place in a greased bowl and loosely cover with a plastic
wrap.
Now take a soft cloth and lay over the plastic wrap so it
covers bowl.
Let rise in a warm place until almost doubled in
size.
This will be about 1 1/4 hour.
You may make a warm
place for dough to rise in your oven if you like.
To do this,
place bowl on rack of cold oven with a pan of hot water under
bowl on bottom of oven. Close door.
When doubled in size punch down dough and divide into 16
equal parts.
Roll each part into a rope 18" long.
Twist into
pretzel shape and place on a greased baking sheet.
Brush with
beaten egg and sprinkle with coarse salt.
Bake 15 to 20 minutes
until golden brown in a 425 degrees preheated oven.
