SPANISH RICE AU GRATIN
Ingredients:
2 1/2 c. water
1 tsp. salt
1 chopped green pepper
1 (16-oz.) can tomatoes, undrained & chopped
6 drops hot pepper sauce, if desired
1 c. uncooked brown rice
2 T. corn oil tub margarine
2 T. chopped onion
1/2 c. shredded lowfat cheese
Method:
Bring water to a boil in 2-quart saucepan.
Stir in brown rice and salt.
Cover, lower heat, and cook for 45 minutes or until water is absorbed.
Melt margarine in a 12-inch skillet.
Add green pepper and onion.
Saute until tender.
Stir in tomatoes, brown rice and hot pepper sauce, mixing well.
Lower heat and cook until liquid is absorbed, about 5 minutes.
Sprinkle in cheese and mix.
Makes 6 servings (about 1/2 cup each).
Microwave Instructions:
Combine margarine, green pepper and onion in a 2-quart casserole.
Cover and microwave on high (100%) for 2 to 3 minutes, stirring once.
Stir in tomatoes, hot cooked brown rice and pepper sauce, mixing well.
Cover and microwave on high for to 3 minutes or until liquid is absorbed.
Sprinkle in cheese and mix.
