TOMATO-BASIL DROP BISCUITS
Yield: 1-1/2 dozen
Ingredients:
1/2 c. finely chopped green onions
1 T. olive or vegetable oil
3/4 c. chopped fresh tomato, drained
1/4 c. minced fresh basil OR 4 tsp. dried basil
2 c. flour
1 T. baking powder
1 tsp. salt
1/4 tsp. coarsely ground black pepper
1/3 c. shortening
2/3 c. milk
Method:
In a small skillet, saute onion in oil until tender. Add tomato;
cook 1 minute longer. Remove from the heat; stir in basil. Cool
slightly. In a bowl, combine the next 4 ingredients. Cut in
shortening until the mixture resemble coarse crumbs. Stir in milk
and tomato mixture just until combined.
Drop by teaspoonfuls 2 in. apart onto greased baking sheets. Bake at
425-F for 10-12 minutes or until golden brown. Remove to wire
racks. Serve warm.
