MEXICAN-STYLE TOMATO BEAN SOUP
Serves: 6-8
Ingredients:
3 c. tomato juice
1 can (16 oz.) refried beans
1 jar (16 oz.) ORTEGA Salsa Prima-Homestyle-Mild
1 c. water
1 pkg taco seasoning mix
1 pkg. (1-1/4 oz.) shredded 4-cheese Mexican blend, 'divided'
Croutons, sour cream and cooked crumbled bacon
Method:
In a large saucepan, combine first 5 ingredients.
Bring to a boil.
Reduce heat to low; cook, stirring occasionally, for 10-15 minutes.
Remove from heat; stir in 1/2 cup cheese.
Spoon soup into serving bowls.
Garnish with remaining cheese croutons, sour cream and bacon.
