ZESTY ZUCCHINI
Serves: 4
Ingredients:
1/3 c. vegetable oil
1/4 c. cider or white wine vinegar
1 T. minced fresh basil OR 1 tsp. dried basil
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
2 to 3 medium zucchini, sliced
Method:
In a large bowl, whisk together the first 6 ingredients.
Add zucchini and toss.
Chill until serving.
