I had this soup at Nicolino's, an upscale Italian restaurant in Northern Illinois. I love their food but sometimes I get a little nauseous because, well just because I do.
A friend let me borrow his new cookbook on cast iron cookery. It is the kind that says, Place 12 coals on the bottom and 6 coals on the top of your cast iron dutch oven. The cookbook is a slim, self-published piece. I found the sausage soup recipe on the 5th page. Guess what the green stuff is? Kale. Have you ever had kale? I haven't. Well, here's the recipe. It is good, but greasy. You might die if you eat more than a cupful. Careful.
Sausage Soup
Brown 1/4 lb. bacon and 1 lb sausage (like Jimmy Dean), and 1 large onion , chopped in a Dutch oven.
Add two large carrots, shredded and 4 chicken boullion cubes, and 12 cups of water (basically just fill the oven with water). Wash and cut the kale into strips and add to the simmering broth. Cook 1 hour.
This is $7.50 a cup at Nicolino's. It must be a million calories. Sorry. Next recipe will be healthy and nearly calorieless. Promise:)
Oh, a Dutch oven is just a big pot. Any big pot will do. But a cast iron one seems to make the food taste better. It does add iron to the food too. Which can be good or bad depending on your body.
I should also tell you that the picture of the authors of that cookbook...well they have experimented with food. It is difficult to trust a skinny cook, if you know what I mean. So I am trying some other stuff before I return the book.
UPDATE! Do not make this soup. On a reheat I found it to be quite greasy and nasty. I think I must have made the original batch on one of those pleasant days when everything goes right and you can fool yourself into thinking something not so good is terrific. Sorry.
