Paganism is a religion with no Heirachy. This means that there is no "Pope" or a servant to the Goddess or the God. We are all equal. Although there are Priests and Priestesses, and High Priests and High Priestesses. A Priest or Priestess is what witches in a coven are called. The leaders of the coven, usually a male and a female, most often partners, are called the High Priest and High Preistess. These titles are not in indication of how "In tune" with the Goddess and God a person is. Nor is it difined by the length of time spent working in a coven. Some Pagans chose to worship only the Goddess. I think this is a reversal of the Christian God only worshipping that has been forced upon us.
Paganism has no doctrine. There is no Pagan Bible. The closest thing we have to the Bible is the Wiccan Rede, which is kind of like the 10 commandments. As there are many forms of Paganism I can only comment on Wicca, as that is the religion that I know most about. Wicca has the rede as it's main set of rules, but basically all of the Christian commandments are condensed into the last line of the rede : If it harms none, do what you will.
Wicca is a nature worshipping religion. We revere nature as the Goddess and the God created all, and we also believe that they are in all living things. Which includes us. Wiccan's don't have temples, because the earth is our temple, and one of the best ways to worship in it is to take a walk through a park and marvel at the wonder of nature. If possible a Witch will perform all rituals outside, as the power of nature is stronger when you are IN it. That is not to say that indoor rituals are bad, but if you have the choice, outside is nicer. A Wiccan will never chop a tree down for the sake of it. and Most will say a little prayer when they pick flowers or herbs that they need for their rituals. I try to leave all plants growing unless it is necessary to pick some for a spell. You should always leave enough of the plant that it can rejuvenate itself.
