I only use one recipe from this book, but I use it a lot, and you
will too.
Cream of Mango Au Kiwi

1 very ripe fresh mango
- 1/2 cup orange juice -- fresh preferred
- 1 tablespoon Grand Marnier
- 1 firm but ripe kiwi (optional)
Blend peeled, seeded mango in blender with orange juice and liqueur.
If you are really tight on calories, or want to remove the alcohol, first
boil the Grand Marnier in a small saucepan until it is reduced in half.
Divide the blended cream into two serving dishes, and chill before
serving. You can garnish with thin rounds of kiwi slices around
the edges of the mango cream.
