Meatballs with Pasta and Sauce
Meat Loaf

This recipe can be used for meat loaf also.
Basic mixture for sauce and meat.
1 med onion, diced
1/4 Bell (green) pepper, diced
3 to 4 t Oregano
3 to 4 t Garlic Powder
For sauce
Use the basic mixture (double it)
Add: 4 to 5 Bay Leaves to sauce
Place half in the meat, the rest is kept in
in large pot for the sauce. (Use 4 to 5 Qt. Dutch Oven)
Saute and mix the following:
1 1/2 to 2 lbs Ground Beef
1 med or large egg
Less than 1/4 cup milk
Approx. 1/2 cup of Bread Crumbs
Sprinkle just a little bit more of garlic powder into mixture.
The following is for either meat balls or Meat Loaf
Meat Balls:
Drop into sauce that is already beginning to boil. Bring to a full boil, then lower heat to simmer. Simmer for approximately 45 minutes. Stir Occasionally. Serve topped with Mozzarella Cheese.
Meat Loaf:
Mold meat into a loaf, place in pie pan not in loaf dish. Pour approxiamtely 16 oz. of tomatoe sauce together with approximately 4 Bay Leaves over loaf.
Bake at 350 degrees for one hour. Sauce Substitution: 10 minutes before meat loaf is done, spread mixture of 1/4 cup catsup and 2 TBL of Brown Sugar.
