Elia's Recipes

In these next sections, I am listing many recipes that I use and enjoy using. I am an avid cook, and I not only cook, but I "cook" (smile). I enjoy cooking and baking, and from what I am and have been told, I'd make a great chef, although I am not thinking along those lines. I do however cook for many people, and on a regular basis. It is a very good feeling to be able to Cook for people and "know" they are going to love it and come back fore more (smile). Feel free to use any of the recipes (I swear by them-smile), and believe me I "know" what is really good, that has come from cooking for to many people with discriminating palates, including my own Enjoy!!! smile...


Bourbon Balls


prep time: 20 minutes; chill for 3 days
This recipie will make about 5 dozen cookies

3 cups of finely crushed chocolate wafers (about 60 cookies)

2 cups of powdered sugar

1 cup of finely chopped almonds, pecans, walnuts, or any other type to your choosing

1/2 cup of bourbon (a bit more if you like)

1/4 cup of light corn syrup, granulated sugar, powdered sugar or dry baking cocoa


Mix crushed wafers, powedered sugar and pecans in a large bowl. Stir in bourbon and corn syrup.

Shape mixture into 1-inch balls.
Roll in granulated sugar. Cover tightly
and refrigerate for at least 3 days before serving
to blend flavors.

Note: for those of you counting calories:
1 cookie has 60 calories

Mud Pie



Prep time: 20 minutes; chill for 30 minutes, then freeze for 7 hours
Makes about 10 servings

18 chocolate sandwich cookies(such as the oreo type but with the chocolate cream)

3 tablespoons of stick margarine or butter melted

1 quart of coffee, chocolate or other flavor ice cream,
slightly softened.

1 cup of Hot Fudge Sauce cooled

1/4 cup of chopped almonds, toasted

Sweetened whipped cream if you choose


Mix crushed cookies and margarine until well blended.
Press on bottom and up along the sides of a pie plate 9x1 1/4 inches.
Refrigerate for 30 minutes.

Carefully spread the ice cream evenly in the crust
and freeze about 3 hours.

Spread the hot fudge sauce over the top of the pie.
Sprinkle the top with almonds.
Freeze this for
about 4 hours or until it is firm.
Remove from freezer about 10 minutes "before" serving.
Then top with the sweetened whipped cream
if you choose. Immediately freeze any left
over pie after serving.
