Christmas Brunch Oven Omelet With Canadian-Style Bacon

Oven Canadian-style Bacon

1/4 Cup (half a stick) of Margarine or butter

1 1/2 dozen eggs

1 cup Of Sour Cream

1 Cup Of Milk

2 Teaspoons Of Salt

1/4 Cup Of Chopped "Green" Onions

Chopped Parsley


Heat the oven to 325 degrees. Prepare Oven Canadian-Style bacon(see preparation for this below) and set aside. Heat the margarinr in a rectangular baking dish in the oven until the margarine is melted. Tilt the dish to throughly coat the bottom. Beat the eggs, sour cream, milk and the salt in a large bowl (this can be done by hand if you don't have an electric beater)until blended. Stir in the onions. Pout into the baking dish, bake the omelet mixture and bacon for about 35 minutes or until the eggs are set but "moist" and bacon is hot. Arrange the omelet on a large platter or other large serving plate, and sprinkle with the parsley.


Oven Canadian-Style Bacon

1 pound of Canadian Bacon cut into twenty-four 1/8 inch slices (you can have this sliced to this thickness even in "any" grocery store, just ask the butchers in the back if the will slice this, they will do it for you). I often have my beef cut to thickness as I like it when I make home made Beef Jerky (smile).

1/4 Cup Of Maple Flavored Syrup

Reassemble slices of bacon on aluminum foil. Pour syrup over bacon. Wrap and place in pan.
