"Ed's Red"




If I had lived back in the wild west days, instead of carrying a six-gun in my holster, I'd carry a soldering iron. That way, if some smart-aleck cowboy said something like "Hey, look. He's carrying a soldering iron!" and started laughing, and everybody else started laughing, I could just say, "That's right, it's a soldering iron. The soldering iron of justice." Then everybody would get real quiet and ashamed, because they had made fun of the soldering iron of justice, and I could probably hit them up for a free drink..



7 Lbs. Amber Malt
.5 Lbs. Chocolate Malt
1.5 oz. Chinook Hops 11.8% (boiling hops)
.5 oz. Tettnager Hops 5.6% (finishing hops)
1 pkg. Edme Ale Yeast
1 Tsp. Irish Moss


Combine the cracked chocolate malt with about 1.5 gals of cold water. Just before the water starts to boil remove the chocolate malt. Use a strainer, or as I do place the chocolate malt in a hop bag. Bring the water to a boil, add the Amber Malt and the Chinook Hops and boil for 45 minutes. During the final 2 minutes of boiling add the Tettnager Hops.


Immediately bring down the temperature of the wort by placing the brew pot in the kitchen sink and fill sink up with cold water for 15 minutes. Transfer to the fermenter and cold water. Add yeast when cool. Fermentation will take a week. Bottle when fermentation is complete.

This is a high alcohol beer and has just the right bite for your taste buds. Great for a peaceful afternoon on the shores of your favorite beach.
