South Miami High School is closed for the summer for repairs so meetings will be held at member's houses as follows:

July 5 meeting has been moved to July 4 to coincide with the South Miami fireworks display at Carol C's house, 6240 SW 69th Ave. (999) 000-0000). Barbeque begins at 6 pm, meeting afterwards, then fireworks around 9 pm or darkness.

Lime Tree Resort on Long Key is scheduled for July 7 and 8. Rooms and boats have been arranged and the trip is full per Brenda C.

Tropical Reef Resort trip is scheduled for July 21 and 22. Contact Clementina S.

San Salvador exotic trip was June 16-23. Thirteen club members and guests had a wonderful time eating, wall diving, wall diving, eating, wall diving and eating. Three wall dives per day and 3 delicious meals per day for 6 days were fabulous. Except for the lettuce leaf algae and diminished visibility (compared to previous exotic trips) the diving is still excellent. Hammerhead sharks were seen almost every day. The water is still cooler, thus the sharks are hanging around.

Carol Cox's Deluxe Cornbread

2 eggs

1 small can creamed corn

1/2 cup vegetable oil

1 tsp onion flakes

1 box Jiffy Corn Muffin Mix

1 cup sour cream

Whisk eggs, vegetable oil, creamed corn,

onion flakes and sour cream together.

Add Jiffy Corn Muffin Mix, fold in.

Pour into greased casserole or baking dish

(9x9"). Bake 375 for 40-45 minutes or

until knife inserted in center comes out clean.

Dump Cake

1 can apple pie filling

1 can crushed pineapple (with juice)

1 pkg. yellow cake mix

2 sticks melted & cooled butter

1 cup angelflake coconut

1/2 cup chopped nuts

Coolwhip

Grease a 9x13 baking dish.

Layer evenly in the following order:

apple pie filling on bottom layer

crushed pineapple with juice

yellow cake mix

melted butter (dribble all over)

coconut (spread evenly)

chopped nuts

Bake 350 d. for 45 minutes.

Top with Cool Whip. Best served cold.
