here's my Mom's recipe for... Potatoe Cake...
Cream one cup shortening (she used Crisco) and 2 cups sugar together. Add 4
eggs - one-half cup milk - 1 cup left over mashed potatoes
and one-half cup of grated chocolate... Fold in 2 cups flour 2Tbsp
Baking powder - one Tbsp cinnamon - one tsp cloves or nutmeg
and one cup chopped nuts... Bake 350 till done.. Frost with a
powered sugar frosting..(she always made it a chocolate one... :)
**NOTE** Our dear Pat has been experiencing some personal and physical problems lately and hasn't been able to participate as much as she'd like but she did sent in some comments in regard to this recipe:

"This is my very favorite cake, I make them and give them for Christmas.
I use cold coffee in the icing instead of milk. Gives it a different flavor.
And I hate dark Choc. so I use Nestles quick or milk chocolate.
I baked them in floured one pound coffee cans, so they look like a log and
then after the icing I put on red and green cherries. People seem to love
them, but when I say Mashed Potato cake they look at me funny, (that's the new
ones getting theirs for the first time).
I got the recipe from my Mother also.
And I love baking Red Velvet Cakes". Sauerkraut Salad
Drain and rinse 1 Quart of sauerkraut
Add: 1 cup diced celery
1 cup diced Bell pepper
1 cup chopped green onions
1/4 cup grated carrots
small jar pimentos
1 or 2 ripe tomatoes
1 cup mushrooms (optional)
Combine: 2/3 cup Vinegar
1/3 cup salad oil
1/3 cup water
1 cup sugar
Mix well, pour over sauerkraut, cover and refrigerate at least 24 hours before serving.
This will stay good in fridge
for 3 weeks.
Cowboy Stew This recipe is how I got my kids to eat tomatoes! It is really tasty and
great to double it for freezing.
1 lb hamburger meat
1 small onion
1 10-oz can tomatoes (stewed or diced)
2 cans Ranch Style beans
1 can whole kernel corn
1 T chili powder (or more, lots more)
1 tsp salt
1 tsp pepper
Heat hamburger meat, onions, salt, pepper, and chili powder in a pot.
Brown hamburger meat mixture, then drain.
Add tomatoes with juice, ranch style beans, corn with juice, and more
chili powder if you'd like. Stir ingredients.
Heat until warm. Serve right away or let it stew for up to 20 minutes
for more flavor.
(I like to brown the meat and spices then put everything in my crockpot and
cook it all day on low. The smell throughout the house is fantastic and the
kids come through the door, sniff and yell, yeahhhhhh, Cowboy Stew!!) Beefy Taco Dip
1 lb. ground beef
1 c. chopped onion
1 lb. process cheese
1/2 to 1 (4 oz.) can green chilies, chopped
1 tomato, chopped
1/3 c. chopped ripe olives
1/4 c. chopped green pepper
Brown ground beef with onion in skillet, stirring until crumbly; drain.
Add cheese.
Cook until cheese is melted, stirring occasionally.
Stir in remaining ingredients.
Transfer to crock pot.
Cook on low until heated through.
Serve warm with corn chips.
*********Crock Pot Tacos
This is different, but makes a excellent dish to serve for parties
(or as a dip as well)
1 pound ground meat
1 medium onion, chopped
1 clove garlic, minced
1/2 cup green pepper, chopped
2 tablespoons of Picante Hot sauce or Pace Hot Salsa
1 (15-ounce) can tomato sauce
1 teaspoon chili powder
1 cup frozen corn
32 ounces chili with beans
3/4 pound grated cheese
Nacho cheese tortilla chips
In a skillet brown the ground meat. Remove from heat and drain. Add the
onion, garlic and pepper and cook until transparent. Add the Tabasco, tomato
sauce, and chili powder. Grease the crock pot with cooking spray. Layer in
5 layers, beginning with meat mixture, then nacho cheese tortilla chips,
meat
mixture - end the fifth layer with chips. Cover and cook on LOW for 6 to 8

Bakeless Cookies2 C White sugar 2 Tbsp. Cocoa
1/2 C Margarine or butter
1/2 C milk
3 C Oatmeal
1 tsp. Vanilla
1/2 C Peanut Butter
Mix together the first 6 ingredients and boil for one (1) minute. Remove
from heat, add peanut butter, mixing well. Drop from rounded tablespoons
onto wax paper. Cool completely and then store in airtight container in a
