Happy Mother's Day

I want to wish a happy day to anyone who has ever mothered a child -- I am glad for my mother who had and raised 7 children. Family life was never boring and now I have many best friends. Thanks for having me, Mom.

Container Gardening

My husband taught a quick community class on container gardening. Here's his handout. I never realized that milk cartons are not recommended. They biodegrade too much and the container falls apart. Grapes on the Fence

We've had this grapevine for years, but there's been problems with the grapes. Not this year (we hope). My husband has carefully dusted and watched the grapes. We have high hopes. Here's what it looks like right now as blooms are coming out.

Richard's Award

Richard got an award on his recent trip to NASA in Houston. I am so proud of him and the work he and his team have done for the Space Shuttle. I always wanted to be an astronaut when I was younger -- and this is so wonderful to see. I love what the space program has accomplished on so little budget (Yes, the space program costs less than 1/300 of what the war in Iraq has costed so far.)

Perfect Guacamole Recipe

My and I are avocado fans. This is indeed a perfect recipe from Simply Recipes.

 

Guacamole

 

2 ripe avocados
½ red onion, minced (about 1/2 cup)
1-2 serrano chiles, stems and seeds removed, minced
2 tablespoons cilantro leaves, finely chopped
1 tablespoon of fresh lime or lemon juice
1/2 teaspoon coarse salt
A dash of freshly grated black pepper
1/2 ripe tomato, seeds and pulp removed, chopped


Garnish with red radishes or jicama. Serve with tortilla chips.

Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.)

Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours.

Keep the tomatoes separate until ready to serve.

Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste.

Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Refrigerate until ready.

Just before serving, add the chopped tomato to the guacamole and mix.

Serves 2-4.

Variations: For a very quick "guac" just take a 1/4 cup of salsa and mix it in with your mashed avocados.

You don't need to have tomatoes in your guacamole.

To extend a limited supply of avocados, add either sour cream or cottage cheese to your guacamole dip.

This is a good page with many links to Photoshop info. I love to use this program and feel like I always have lots to still learn about it. I subscribe to 3 different Photoshop podcasts, too. Tips from the Top Floor is one of my favorite podcasts.

How to Bathe a Cat

This is from Wiki-How on how to bathe a cat. I had to laugh at the picture of the totally disgusted cat (reproduced here). Fortunately, we have indoor cats, no allergies and no need to bathe -- usually. Still, those moments will come -- and I will likely take them to our vet for the bath when it does.
