CROCKPOT HAMBURGER CASSEROLE
1 small potato, thinly sliced
1 carrot, sliced
1 cup frozen peas, thawed
1 small onion,chopped
1 stalk celery, sliced
salt and pepper to taste
1/2 pound lean ground beef, browned and drained
1 8 oz. can tomato sauce
Place layers of vegetables in crockpot in order given. Season with
salt and
pepper. Place ground beef on top. Pour tomato sauce over all. Cover and
cook
8-12 hours.
Crock Pot Lemon Chicken
6 Chicken Thighs Without Skin -- or pieces, cut up
1/2 Cup Flour -- mixed with
1 teaspoon salt
1 tsp Balsamic Vinegar
3 Tbs Catsup
3 Tbs Brown Sugar
6 Ounces Lemonade, Frozen Concentrate
2 Tbs Cornstarch -- mixed with
1/4 C water
Dredge the chicken in flour mixed with salt. Shake off excess and
brown in a
hot skillet. Remove chicken and put in the crockpot. Mix the
lemonade,
brown sugar, vinegar (use regular vinegar if you prefer) and catsup
and pour
over the chicken. Cook on high for 3-4 hours. When ready to serve,
remove
the chicken to a warm platter and thicken the sauce with the
cornstarch/water
solution, and serve along with the chicken. This is EXCELLENT and
quick and easy.
CROCKPOT LEMON-GARLIC CHICKEN
3 lb Chicken
1/2 cup Lemon juice
1/2 cup Garlic cloves; crushed
1 tsp Seasoned salt
1 tsp Poultry seasoning
2 ds Tabasco
1 cup White wine
Skin and cut up chicken. Combine with other ingredients in crockpot.
Set on
low. Upon return from work, de-bone chicken. Serve over rice. If you
freeze
chicken pieces separately, and mix up other ingredients the night
before, you
can dump it all together quickly in the morning. And if you start with
frozen
chicken it doesn't fall apart.
Crock Pot Luck
1 pound of beef cubes
1 can of golden mushroom soup
1 can of cream of mushroom soup
Put all ingredients in the crock pot. Cook on low for about 8 hours.
Re: Crock pot luck
I make this same dish but use two cans cream of mushroom and add sliced
onion. It's best served over noodles. We love it too.
Crockpot Meat Loaf
1/2 cup whole milk
2 slices white bread
1 1/2 lb ground beef
2 eggs
1 small onion, peeled
1 1/2 tsp salt
1/2 tsp pepper
1 tsp dry mustard
1 can (12 oz.) whole tomatoes
Place the milk and the bread in a large mixing bowl, and let stand
until the
bread has adsorbed all the milk. With two forks, break the bread into
crumbs.
Beat the ground beef into the crumbs until well mixed. make a hollow
in the
center of the meat and break the eggs into it. Beat the eggs a little;
then
grate the onions into the eggs. Add salt, pepper and mustard. Beat the
eggs
into the beef. Shape into a round cake and place in the slow
cooker. Drain the tomatoes, and place them on the meat. Cover and
cook on
Low for 5 to 7 hours. Before serving, uncover the pot; turn the heat to
High,
and bubble away some of the sauce. It should be thick, not thin.
Baked Apples
apples -- 6-8, washed/cored
2 tb raisins
1/4 c sugar
1 ts cinnamon
2 tb butter
Mix raisins and sugar; fill center of apples. Sprinkle cinnamon and
dot with butter. Put in Crock-Pot; add 1/2 c water. Cover; cook on
Low 7 to 9 hours [High: 2 1/2 to 3 1/2 hours].
Crock Pot Taco Casserole
1 lb. ground beef or turkey
1 med. onion, chopped
1 clove garlic, minced
1/2 c. green pepper, chopped
2 drops Tabasco sauce
15 oz. can tomato sauce
1 tsp. chili powder
1 c. frozen corn
2 (16 oz.) cans chili with beans
3/4 lb. grated cheese
Nacho cheese tortilla chips
Brown ground meat and drain. Add onion, garlic and pepper and cook
until
transparent. Add remaining Tabasco, tomato sauce, and chili powder.
Grease
crock pot and layer in 5 layers, beginning with meat mixture and nacho
cheese
tortilla chips, then the corn, chili, and grated cheese. Cover and cook
6 to 8
hours on low.
Crock Pot Swiss Steak
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 - 2 lb. round steak
1 med. onion, diced
2 tbsp. butter
1 can tomato soup or equivalent whole tomatoes, or stewed tomatoes
1/2 c. water
1 1/2 tsp. vinegar
Combine flour, salt, pepper and pound mixture into steak. Brown steak
in
butter and onion. Add tomato soup, water, vinegar and place in crock
pot. Let
simmer 3 to 4 hours (is more tender if left all day).
Serves 4 to 6.
