CASSEROLES
TOMATO CASSEROLE
1 large bell pepper, chopped
2 large onions, chopped
1 cup celery, chopped
2 16-oz.cans tomatoes, drained
dash of tabasco (optional)
1 tbsp. worchestershire sauce
salt to taste
6 slices bread, toasted on both
sides
1 lb. sharp chedder cheese, grated
Saute first three ingredients. Mix
with tomatoes, worchestershire sauce
and salt. Tear toast in pieces and
add to tomato mixture. Pour into
3 qt. casserole, alternating layers
of tomato mixture and cheese, ending
with cheese on top. Bake at 325 degrees
for 35 minutes. Serves ten or
twelve.
MUSHROOM RICE
1 onion, chopped fine
1 can consomme soup
1 can water
3/4 stick margarine, melted
1 cup Uncle Ben's rice
1 jar sliced mushrooms(not drained)
Put in bakng dish and mix. Cover, bake 1
hour at 350 degrees.
SWEET POTATO CASSEROLE
3 cans sweet potatoes, mashed
1 tsp. vanilla
2 eggs
1 tsp. cinnamon
2/3 cup sugar
1/2 tsp. salt
1/4 stick butter
Mix all ingredients and pour into
greased baking dish.
TOPPING:
1 cup brown sugar
1 cup nuts,chopped
1/2 stick butter
Mix together and sprinkle over top
of potato mixture. Bake at 300 degrees
for 35 minutes.
WILD RICE HARVEST CASSEROLE
4 to 5 cups diced cooked chicken
2 tbsp. butter
2 cups chicken broth
1 small onion
3/4 cup chopped celery
3/4 cup cashew halves
1/4 tsp. poultry seasoning
2 cans cream of mushroom soup,
undiluted
1 (4.5 oz.) jar sliced mushrooms,
drained
1 cup uncooked wild rice, rinsed and
drained
Fresh parsley, chopped
In skillet, brown chicken and celery
in butter. In large bowl, combine soup
and broth until smooth. Add
mushrooms, onion, rice, poultry
seasoning and chicken mixture.
Pour
into greased 13 x 9-inch baking
dish.
Cover and bake at 350 degrees for
1 hour. Uncover and bake for 30 minutes.
Stir, sprinkle with cashews.
Return to oven for 15 minutes or until
rice is tender. Garnish with
parsley. Serves 10 to 12.
Egg Plant Casserole
2 medium size eggplants
1 large onion
1/2 tsp salt
1 stick margarine
2 eggs
1 cup milk
1 section ritz crackers
Cook first four ingredients together
until
eggplant is tender. Add milk and eggs.
Next
add crushed ritz crackers. Pour
into
lightly greased pyrex dish. Bake 375
degrees
for 45 minutes.
No Peek Beef Casserole
2 lbs. all meat stew beef(cut into
bit-size pieces)
1 envelope Dry Onion Soup Mix
2 (10 3/4 oz.) can Cream of Mushroom
Soup
Mix all ingredients in a 2 quart
casserole
dish and cover tightly. Bake in a 300
degree
oven for 3 hours. DO NOT PEEK!
Serve over noodles or rice.
Yield: 6 to 8 servings.
Cheese Grits Casserole
4 cups boiling water
1 tsp. salt
1 cup quick-cooking grits
3 tbsp. butter
3 large eggs
1/4 lb. sharp cheddar cheese-grated
Into boiling water, slowly stir in grits
and salt.
Stir often until grits are thick-for
about 5
minutes. Turn off heat, whisk in butter
and cheese
(3/4) until melted. Whisk in eggs, one
at a time
until blended. Turn into 1 1/2 qt.
casserole.
Sprinkle remaining 1/4 cup grated cheese
on top.
Bake at 350 degrees for 30 minutes. Let
stand at
room temperature for a few minutes.
Serves six.
Cabbage Gourmet Casserole
1 cabbage
1 onion
1 green bell pepper
1 cup of celery
Cut the above ingredients. Cook
together in
salted water for 5 minutes.
CHEESE SAUCE
1 stick margarine
1 cup milk
1 cup grated cheese
2 tbsp. corn starch or flour
Cook this in double boiler, stirring
constantly.
Pour sauce (when thickened) over cooked
vegetables
which have been put into a baking dish.
Bake 30
or 40 minutes at 350 degrees. Sprinkle
bread
crumbs on top before you bake.
Okra Casserole
1 pkg. (16 oz.) frozen okra
2 medium ripe tomatoes
1 small onion
1 lb. ground sausage meat
Place okra in a casserole dish. Peel
and
cut tomatoes, and put on top of the
okra.
Dice onion and sprinkle on top of the
tomatoes.
Put the raw groung sausage on the top.
Put in
preheated oven for 30 to 45 minutes or
until it
is done.
Hashbrown Casserole
2 lb. pkg. frozen hashbrowns, thawed
1 cup onions, chopped or minced onion
flakes
1 pint sour cream
1 can cream of chicken (or cheddar
cheese) soup
1 stick butter or margarine,
melted-optional
2 cups grated cheese
Mix all ingredients. Sprinkle top with
cracker
crumbs. Bake at 325 degrees for one
hour.
Brown Rice Casserole
1 stick butter
1 large onion (chopped)
1 can mushrooms
2 cans consomme soup
1 cup long grain rice
Saute onions in butter, add rice,
stirring
constantly for 10 minutes over medium
heat.
Add soup and simmer for 10 minutes.
Place in
well greased casserole dish with cover.
Bake
at 350 degrees for 35 to45 minutes.
