Broccoli Corn Bread
1 (10 oz.) frozen broccoli, chopped
1 (6 oz.) cottage cheese, small curd
4 eggs, beaten
1 box Jiffy corn muffin mix
1 lg. onion, chopped
1 stick butter, melted
1 tsp. salt
Mix all together and bake at 400
degrees for 30 minutes in 13x9-inch
greased pan.
Banana Bread
3 ripe bananas, mashed
2 eggs
1/2 cup nuts
Pinch salt
2 cups flour, plain
1/2 cup butter
1 tsp. soda
1 cup sugar
Cream butter and sugar, add mashed
bananas, beaten eggs and flour which
has been mixed with soda and salt.
Stir in nuts. Pour into 3
well-greased small loaf pans. Bake
at 350 degrees for 50 minutes or
until bread tests done. Cool on rack
before slicing.
Banana Bread
2 ripe bananas, mashed
1 cup sugar
2 eggs
3 tbsp. milk
1 tsp. vanilla
Combine preceding ingredients in large
mixing bowl. Stir together:
1/2 tsp. soda
1/2 tsp. baking soda
2 cups plain flour
Add to banana mixture slowly. Beat
constantly. When well mixed, add 1/2
cup melted butter or margarine and 1/2
cup chopped nuts. Bake at 325 degrees
for 1 hour.
Monkey Bread
Use canned biscuits (2) for loaf pan.
Cut each biscuit in half. Melt 1/2
stick butter and dip biscuit into melted
butter. Dip into cinnamon and sugar
mixture. Bake until done.
Spicy Zucchini Bread
3 cups flour, self-rising
2 tsp. cinnamon
1 tsp. salt
2 1/4 cups sugar
1 cup chopped nuts, optional
2 tsp. vanilla
3/4 cup oil
3 eggs
3 cups unpeeled, shredded zucchini
Combine dry ingredients plus nuts. Mix
eggs, oil, sugar and vanilla. Stir in
zucchini. Add dry mixture. Stir just
until moistened. Spoon mixture into 2
greased and floured loaf pans. Bake at
350 degrees for 45 minutes. Cool 10
minutes, then remove from pans. One
half to 1 cup raisins may be added also.
Freezes well.
Hush Puppies
1 1/2 cup cornmeal, sel-rising
1 tsp. sugar
1 egg
Chopped onion, to taste
1/2 cup flour
2 tsp. baking powder
1 cup milk
Mix all ingredients and drop from
tablespoon into hot deep oil. Makes
about 20. You can use buttermilk and 1
teaspoon soda instead of sweet milk.
Broccoli Corn Bread
4 eggs, beaten
1 stick margarine, melted
1 cup cheddar cheese, grated
1 (8 1/2 oz.) box corn bread mix
1 lg. onion, chopped
3/4 cup cottage cheese
1 box chopped broccoli, well drained
Mix all ingredients together and pour in
greased pan. Cook at 375 degrees for 45
minutes.
Mini Sour Cream Muffins
1 cup butter or margarine, softened
1 (8 oz.) sour cream
2 cup flour, self-rising
Combine butter and sour cream until
smooth. Stir in flour until blended.
Spoon 1 tbsp. batter into each miniature
muffin cup. Bake at 350 degrees for 25
to 30 minutes.
Mexican Corn Bread
2 cups cornmeal, self-rising
1 sm. can El Paso green chilies,
chopped
1 1/2 cup buttermilk
1 can cream corn
2 eggs
1 to 3 jalapeno pepper, chopped
1 onion, chopped
1/2 lb.grated cheese
Mix all ingredients, pour into greased
pan. Bake at 350 degrees until done.
(This may take longer to cook than
regular corn bread).
Potato Bread
Use leftover mashed potatoes
1 1/2 cup flour, plain
1/4 tsp. salt
6 tbsp. butter (room temperature)
4 scallions, sliced
2 1/4 tsp. baking powder
1/8 tsp. pepper
1 1/2 cup mashed potatoes, chilled
Preheat oven to 425 degrees. Lightly
grease baking sheet; set aside. In
large bowl, combine flour, baking
powder, salt and pepper. With pastry
blender or 2 knives cut in butter until
coarse crumbs. Stir in mashed potatoes
and scallions to make a soft dough. On
lightly floured surface, knead dough 3
to 4 minutes. Using a rolling pin, on a
lightly floured surface, roll dough to
1/4-inch thickness. Use 3 1/2 inch
round cookie cutter or glass, cut into
rounds. With metal spatula transfer to
prepared baking sheet. Bake for 25
minutes until golden brown. Cool on
wire rack for 5 minutes. Serve
warm.
Pumpkin Bread
3 cup sugar
1 cup oil
3 eggs
2/3 cup water
3 cup flour, plain
1 tsp. cinnamon
1 1/2 tsp. salt
1 tsp. nutmeg
2 tsp. baking soda
1 tbsp. baking powder
2 cups pumpkin
1 cup chopped nuts
Beat together sugar, oil and eggs. Sift
together flour, cinnamon, salt, nutmeg,
baking soda and baking powder. Add
sifted dry ingredients alternately with
water, beating after each addition. Add
pumpkin, nuts and stir well. Pour into
greased loaf pans. Bake at 350 degrees
for 90 minutes or until tester comes out
dry.
