These weapons of mass destruction are, in short, overpowered beam rifles. The difference between beam rifles and cannons are that cannons have significantly fewer shots, are generally much larger in size than rifles, and in some cases have immense recoil. In every case, beam cannons can deal serious punishment if the shots connect, and due to the large blast size, usually do. Some mobile suits may find the cannon too bulky for use. Some variations of cannons are also very expensive.
You will also find beam cannons for space cruisers and battleships at the bottom, if there are any.
