Marinades & Sauces for Grilling

Pollo loco marinade (2nd)
Yield: 4 Servings

1 ea Lemon; squeezed
1/4 c Orange juice
1 ea Lime; squeezed.
1 x Cilantro

Pour over raw chicken and let soak for up to 4 hours and grill on the
bbq.. also you can add tequilla and its wonderful.

Honey-Wine Marinade
Yield: 1 & 1/2 cups

2 tb Butter
1 c Dry white wine
2 tb White wine vinegar
1/3 c Honey
1 ts Fresh chopped mint -or crumbled dry mint
1/2 ts Salt
2 ea Cloves garlic;mince or press

Melt butter in a 1 or 2 quart saucepan over medium heat. Remove from
heat and add remaining ingredients. Stir to blend. Source: The

Apple Juice Marinade (for pork)
Yield: 1 & 1/4 cups

1/2 c Apple juice
1/4 c Soy sauce
1/4 c Honey
2 tb Lemon juice
1/2 ts Garlic powder
1/4 ts Dry mustard
1/4 ts Ground ginger

In a bowl, stir together all ingredients. Makes 1 1/4 cups.

Whiskey Barbecue Sauce
Yield: 1 Servings

3 Bacon strips; crumbled
1 1/2 c Catsup
1/4 c Molasses
2 tb Cider vinegar
2 tb Worcestershire sauce
2 tb Whiskey
2 tb Brewed coffee
1 ts Dry mustard
1 ts Hot pepper sauce

** Pour on pork, chicken, beef, or turkey burgers - anything and
everything!** Mix all ingredients and simmer about 30 minutes.

Sweet & Savoury Grilling Sauce
Yield: 2 Cups

1 1/2 c Thick tomato sauce
3 tb Sweetener
1 tb Molasses
1 tb Olive oil
2 tb Soy sauce
1 ts Paprika
1 ts Chili powder
1 ts Mustard
1 ts Garlic powder
1 ts Oregano

Combine all the ingredients in a mixing bowl & mix well. Cover & let
stand for at least 1 hour.Use to as a marinade for grilled seitan or tempeh.

Teriyaki Marinade
Yield: 1 Cup

1/4 c Soy sauce
1/4 c Sake
2 tb Safflower oil
2 tb Dark sesame oil
3 tb Light brown sugar
2 tb Rice vinegar
2 ea Garlic cloves, crushed
1 ts Ginger, grated

Combine all the ingredients in a small container. Let stand until the
sugar is dissolved. When brushing onto the foods, swirl the mixture
often to keep it well combined.

Use to marinade cut & pressed tofu, marinade for 1 hour, or marinade
cubed tempeh for 1 hour or cubed seitan. Aternatively, brush over

Curry Marinade
Yield: 1 Cervings

2 tb Safflower oil
1/4 c Dry white wine
Juice of 1/2 a lemon
1 tb Soy sauce
2 tb Shallot, minced
2 ts Curry powder

Combine all the ingredients in a container. Swirl often when
brushing over foods to prevent separation.
Use to marinate cubed tempeh for 1 hour. Or brush over grilling
eggplant, onions or potatoes. (To grill potatoes, try parboiling
