Heather`s Lasagna
Garfield Approved!

Sauce:
3/4 lb ground beef or equivalent weight in your favorite vegetables
1 tsp each of olive oil and butter
1 medium onion, chopped
1 garlic clove (or to taste depending on how daring you are!)
1 tsp sugar
2 tsp salt
1 tsp pepper
2 tsp dried basil
1/2 tsp anise seed
1/2 tsp coriander
1/2 cup red wine
2-19 ounce cans of crushed tomatoes
2 tsp tomato paste

On medium heat cook onions, minced meat/veggies with salt, pepper, coriander, anise seed and basil with olive oil and butter until well browned. Add wine and simmer until wine is absolved (no cover). Add tomato paste, crushed tomatoes, and sugar. Bring to a medium boil and lower to simmer. Cook for 45 minutes. Serves 6.

For first time lasagna constructors or people like me who need constant cooking instruction, my pal Jenny (visit her cool iguana site... link is on main page!) has drawn up a diagram.

(I promise that it wasn`t previously a biology diagram of skin first!)

David`s Chili

1 lb lean ground beef
1 tbsp. oil
2 large onions, chopped
2 to 4 cloves garlic, minced
2 8oz cans tomato sauce (no salt added)
1 1/2 cups water
3 tbsp. chilli powder
1/8 tsp. cayenne pepper
1 tsp. ground cumin
1 tbsp. fresh oregano or 1 tsp. dried oregano
Ground black pepper to taste
1/2 tsp. salt
2 15oz. cans kidney beans, rinsed and drained
2 tbsp. cornstarch
1/4 cup cold water

Heat a heavy skillet over medium-high heat. Add ground beef and sauté, stirring occasionally, 4 to 5 minutes, or until meat is no longer pink. Pour contents of pan into a strainer or colander lined with paper towels. Allow fat to drain out.

In a large saucepan or Dutch oven, heat oil over medium-high heat. Add onions and sauté 2 to 3 minutes, or until translucent. Add meat, garlic, tomato sauce and 1 1/2 cups water. Simmer 20 minutes. Stir in chilli powder, cayenne pepper, cumin, oregano, pepper, salt, and beans. Allow to simmer an additional 30 to 40 minutes. Combine cornstarch and cold water. Stir into chili mixture to thicken, and cook an additional 3 to 4 minutes. Serve hot. Enjoy!!!!

** Excellent alone or with plain, salted tortilla chips
