The most often called for cocktails are the Manhattan & Martini. Knowing the ingredients is preliminary but knowing the Manhattan and Martini drinker is necessary, for here we have the fussiest of all drinkers. The other cocktails in this lesson however demand the same care and skill in preparation and presentation.

REMINDER:
Most busy places pre-mix Manhattans & Martinis (at a ratio of 3:1 that will be explained). These drinks are served only from a service bar, never serve a pre-mixed drink to your customers.

Martini

MANHATTAN: - Cocktail glass - take mixing glass fill with 1 scoop of crushed ice - add 1/2 oz. sweet vermouth - 1 1/2 oz. rye - stir with mixing spoon 6 times - strain into cocktail glass - garnish with a cherry.

MARTINI: - Cocktail glass - take mixing glass fill with 1 scoop of crushed ice - add 1/2 oz. dry vermouth - 1 1/2 oz. gin - stir with mixing spoon - strain into cocktail glass - garnish with an olive.

ROB ROY: - Cocktail glass - take mixing glass fill with 1 scoop of crushed ice - add 1/2 oz. dry vermouth - 1 1/2 oz. scotch - stir with a mixing spoon 6 times - strain into cocktail glass - garnish with twist of lemon.

SOUTHERN COMFORT MANHATTAN: Cocktail glass - take mixing glass fill with 1 scoop of crushed ice - add 1/2 oz. dry vermouth - 1 1/2 oz. Southern Comfort - stir with mixing spoon 6 times - strain into cocktail glass - garnish with a cherry.

BRANDY MANHATTAN: Cocktail glass - take mixing glass fill with 1 scoop of crushed ice - add 1/2 oz. sweet vermouth - 1 1/2 oz. brandy - stir with mixing spoon 6 times - strain into cocktail glass - garnish with a cherry.
 

REMINDER:
Special care should be taken to use sparkling clean pre-chilled cocktail glasses.
Every customer should be asked when ordering Southern Comfort Manhattans or Rob Roys their preference of their vermouth.
All these drinks may be served on the ice (rocks) in a rocks glass if so requested.
