TROPICAL AVOCADO & FRUIT SALAD WITH
CREAMY LIME DRESSING
1 papaya, seeded, peeled and cubed *
2 cups fresh pineapple chunks * 1
(11-ounce) can water-packed mandarin
oranges, drained * 1 avocado, seeded,
peeled and diced * 2/3 cup Creamy Lime
Dressing (below) * 1 tablespoon snipped
fresh mint (optional)
In large bowl, combine papaya,
pineapple, oranges & avocados. Add
dressing & fold until fruit mixture is
coated. If desired, sprinkle with mint
to garnish.
Makes 8 side-dish servings.
Creamy Lime Dressing:
1/2 cup plain yogurt * 2 T honey * 5
t lime juice

MAUI PASTA SALAD
3 cups Cooked spiral pasta * 2 cups
snow peas * 1 cup sliced carrots * 1 cup
sliced cucumbers * 1 cup pineapple juice
* ½ cup Italian dressing * ¼ cup Chopped
cilantro or parsley * 1 T Toasted sesame
seeds
Combine all ingredients in large
bowl. Chill at least 15 minutes.

DIAMOND HEAD SALAD WITH MANGO
DRESSING
Dressing: 2 T minced mango * 2 T
orange juice * 2 T rice vinegar * 1/2 t
soy sauce * 1/4 t salt * Freshly ground
black pepper to taste * 2 T olive oil
Salad: 1 (10-ounce) package prepared
salad mix, including some bitter greens
such as endive or radicchio * 2 papaya,
peeled, seeded and diced * 1 mango,
peeled and diced * 1/2 red bell pepper,
thinly slivered
To prepare the dressing: Combine
mango with orange juice, vinegar, soy
sauce, salt & pepper, whisking well.
Whisk in the olive oil and refrigerate
until ready to serve.
Toss salad ingredients with the
dressing and serve.
