Greek Spinach Melts

These toasty bread slices are reminiscent of greek Spinach pie.

Ingredients:

1 loaf french bread, sliced
1 package (9 oz) frozen chopped spinach, thawed and drained (squeeze out excess water)
1 plum tomato, seeded and chopped
1 garlic clove, pressed
1/4 cup onion, chopped
1/2 cup crumbled feta cheese
1/4 cup mayonaise
1/4 cup sour cream
1/2 teaspoon dried dill weed
1/4 teaspoon salt

Directions:

Preheat oven to 375° F. Combine all the ingredients except bread in a 2 quart bowl. Place the sliced bread on a cookie sheet and spread 2-3 tablespoons of spinach mixture on top and bake for 10-12 minutes or until heated through and serve immediately.
Yeild: 12 servings
Approximately 109 calories and 4 grams of fat per serving.
