Cranberry Apple Bread

Ingredients:

1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoons baking soda
2 cups peeled, cored and chopped granny smith apples
3/4 cup sugar
2 tablespoons vegetable oil
1 egg
1 cup fresh cranberries
1/2 cup chopped walnuts

Directions:

Mix dry ingredients together and set aside. Beat the egg in a separate bowl and then add in the apples, sugar and oil. Add flour and fold in until just moistened. Batter will be thick. Stir in cranberries and walnuts and then spread batter into a greased loaf pan and bake at 350°F for 1 hour or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes and then remove and cool completely. Makes 12 servings.

Cranberry Orange Bread

Cranberry Orange Bread

Ingredients:

2 cups all purpose flour
1 cup quick or old fashioned quaker oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup orange juice
2 eggs
1/3 cup vegetable oil(or substitute applesauce for lower fat content)
1 tablespoon grated orange peel
1/2 cup chopped nuts (optional)
3/4 cup chopped cranberries

Directions:

Heat oven to 350°F. Grease and flour only the bottom of a 9 inch loaf pan. Combine the first 6 ingredients (dry) and set aside. Beat orange juice, eggs, oil and orange peel well with a mixer. Add dry ingredients until just moistened and then fold in cranberries and nuts. Pour into the loaf pan and bake for 60-70 minutes until a toothpick inserted in the center comes out clean. Cool ten minutes in the pan and then remove and cool completely.
Makes 12 servings.
