Easy Banana Bread

Ingredients: 1/3 cup shortening 1/2 cup sugar 2 eggs 1 3/4 cup all purpose flour 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup mashed ripe bananas

Directions: In a mixing bowl cream shortening and sugar. Add eggs and mix well. Combine the dry ingredients and add to the creamed mixture alternately with the bananas, blending well after each addition. Pour into a greased loaf pan and bake at 350°F for 60 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for ten minutes and then remove and cool completely on a wire rack, makes one loaf.

Whole Wheat Banana Bread

Ingredients: 1 1/4 cup all purpose flour 1/2 cup whole wheat flour 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sugar 1/4 cup vegetable oil 1 egg 1 cup mashed ripe bananas (about 2 medium bananas) 1 teaspoon vanilla extract

Directions: In a mixing bowl cream shortening and sugar. Add eggs and mix well. Combine the dry ingredients and add to the creamed mixture alternately with the bananas, blending well after each addition. Pour into a greased loaf pan and bake at 350°F for 45 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan for ten minutes and then remove and cool completely on a wire rack, makes one loaf.
