Baked Custard

Baked Custard

Ingredients:

2 egg yolks
3 eggs
1/2 cup sugar
1/8 teaspoon salt
3 cups very hot milk
1 1/2 teaspoons vanilla
nutmeg

Directions:

Preheat oven to 325°F. These traditional desserts can be prepared in brown custard cups or one large baking dish. Butter a 1 quart baking dish or 8 ramekins.Set a shallow pan large enough to hold the baking dish or ramekins in the oven and fill with 1 inch of hot water. Let the pan stay hot in the oven while you prepare the custard. Beat the eggs and egg yolks together just enough to blend. Stir in the sugar and salt and then slowly whisk in the hot milk, stirring constantly. Blend in the vanilla and then strain into the prepared dish. Sprinkle with the nutmeg and then place the baking dish or ramekins in the pan full of water in the oven. Bake for 45 minutes until a knife inserted in the center comes out clean.

Variations:

Caramel Custard - Melt a 1/2 cup sugar in a heavy-bottomed skillet and cook without stirring, swirling the pan so that the sugar moves while it melts. When the sugar becomes caramel-colored, pour into the bottom of the buttered dish and quickly swirl to coat all of bottom and sides (before custard is poured in). If using the ramekins, measure 1 tablespoon of the sugar into each cup and swirl to coat. The caramel will harden at first, but softens as you pour the custard mixture in the pan and bake as above.

Chocolate Custard - Melt 1 1/2 ounces unsweetened chocolate in the milk while it is being heated to make the custard.

Coconut Custard - Add a half cup of flaked coconut to the custard mixture before baking.

Coffee Custard - Add 2 tablespoons instant coffee to the milk as its being heated to make the custard.

Old Fashioned Bread Pudding

Ingredients:

8 slices buttered toast cut in cubes
2 eggs, slightly beaten
1 1/2 cups (12 oz can) evaporated milk, scalded and cooled
1/2 sugar
1/2 cup raisins
1/2 cup water
1 1/2 teaspoons vanilla
1 tablespoon sugar
1/2 teaspoon cinnamon

Directions:

Preheat the oven to 350°F. Mix all ingredients, except the last two and fold into a 9 inch square baking dish sprayed with non-stick spray. Then sprinkle with the cinnamon and sugar. Bake for 45 minutes until a knife inserted in the center comes out clean.
